Aloy is given an option after encountering GAIA face to face in Horizon Forbidden West. You have the option of going after any of the world's three subordinate AIs, Aether, Poseidon, or Demeter, but the decision feels crushing as if you're missing out on something if you pick the easy route. What happens when you choose Aether, Poseidon, or Demeter?
GAIA provides you with this option, along with a level requirement for each AI. Aether is a quest for level 17, Poseidon is a quest for level 22, and Demeter is a quest for level 24. Each one is in a different part of the world, and some, like Poseidon, sound more intriguing than others. While we recommend sticking with the quest that is appropriate for your level, this element may alter soon after you make your pick.
The only difference between selecting one AI over the other is GAIA's discourse. She'll talk about that AI, but she'll also note that Aloy can change her mind at any time. Then you have the option of heading west in search of your first AI or returning east to complete any unfinished side tasks. Of course, this implies that when you return, your level may be significantly higher.
